Feta Omelette w/Turkey Sausage

Ingredients

    1 1/2 cups Eggbeaters
    4 Banquet BnS Turkey Sausages, cooked and chopped
    1/4 cup shallot, diced
    1/4 cup red peppers, diced
    1/4 cup kale, chopped
    1.25 oz Fat Free Feta Cheese

Tips

I used what was in my kitchen/garden. Easy to substitute other veggies if you don't have the ones used.

If you want it lower fat, use only 3 sausages.


Directions

Saute shallot, peppers, kale in skillet sprayed with Pam. Add cooked/chopped sausage and saute a minute more.

Meanwhile, combine eggs and egg whites and whisk till foamy. Spray PAM on veggie/sausage mixture and add egg mix. Cook until bottom done, flip and cook other side. Sprinkle on Feta and fold over. Serves 2.
