Vegan, raw and delicious! This can be made using cooked chickpeas and mung beans, but I love the crunchy, earthy taste! Ingredients

Chick Peas sprouted, raw, 0.5 cup
Mung beans, mature seeds, sprouted, 0.5 cup
Half a Med. Green Bell Pepper
Celery, raw, 1 stalk, small
Olive Oil, 2 1tsp
Yellow Mustard, 1 tsp
Balsamic Vinegar, 0.5 tbsp
Pepper, black, 1 tsp
Fresh Chives, 3 tbsp chopped
1 Tbs. chpped fresh mint
Sea salt, pinch
Cayenne pepper, dash
1 tsp mixed dried salad herbs
Tips
Directions
Chop the onions, pepper and celery into thin slices. Ad everything to a mixing bowl and combine gently so that the sauce is evenly spread through the salad. Leave for an hour to absorb all the flavours of the oil and seasoning.
