Mac and Cheese soup

Number of Servings: 6

Ingredients

    2 large carrots (chopped)
    2-3 stalks celery (chopped)
    4-5 shallots (chopped)
    1 tsp olive oil
    8 cups water (or as wanted for batch)
    1 - 2 tbsp of vegetable bouillon (to taste)
    Elbow Macaroni (1/2 package)
    Parmesan Cheese
    Cheddar Cheese
    milk (optional)

Directions

Chop all vegetables, put in pot, add oil and cook until shallots are fragrant. Add 8 cups water and vegetable bouillon.

Bring to a boil, cook until vegetables are tender. Add noodles.

When noodles are finished, add cheese to taste and optional milk.

Serving Size: Make 6-7 bowls
