Bok Choy & Pineapple Slaw

Ingredients

    1 pound bok choy/baby bok choy (about 4 cups), very thinly sliced
    2 cups pineapple, thinly sliced
    1 cup fresh cilantro leaves
    3 tablespoons olive oil
    3/8 teaspoon kosher salt
    1/4 teaspoon fresh ground pepper

Directions

IN a large bowl, toss bok choy, pineapple and cilantro leaves.


SPRINKLE with olive oil, salt and pepper. Toss to coat.


REFRIGERATE at least 15 minutes before serving.
