Coconut Curried Chowder

Ingredients

    2 tsp olive oil
    2/3 cup chopped onion
    3 chopped green onions, separate white from green
    1 cp peeled diced sweet potato
    1/3 cup diced red pepper
    3 tsp grated ginger
    2 cloves chopped garlic
    3 cups veg broth
    14 oz can of lite coconut milk
    1/2 cup frozen peas
    2.5 tsp curry powder
    1/2 tsp lemon zest
    1/8 tsp cayenne pepper
    1/4 tsp salt
    349 grams lite firm tofu
    2 tbsp chopped fresh cilantro

Directions

cook onion and white onion. add sweet pepper, potato, tsp ginger, and garlic. saute. stir in broth, reduce heat and cook until potato tender. Add milk, peas, curry, zest, cayenne, salt, remaining ginger, and green onion. gently stir in chopped tofu. let stand x 30 minutes to allow tofu to absorb flavors. stir in cliantro before serving
