Introduction

A VERY GREEN soup, next time I will back of on the spinach and only use half. It was a little overpowering. The white beans add a nice creamy texture. Number of Servings: 6

Ingredients

    1 lb asparagus, chopped in 1 inch pieces
    1 box frozen chopped spinach
    1 leek, diced
    a clove garlic, minced
    4 cups low sodium chicken broth
    15 oz tin of white beans, drained & rinsed
    1 Tbs EVOO
    1 Tbs fresh tarragon
    squirt of fresh lemon juice
    salt pepper

Directions

Steam frozen spich in a microwave safe bowl, squeeze to remove as much water as possible. Saute the leek, garlic and asparagus in EVOO over medium-low for about 6 minutes or until beginning to soften. Add to a heavy bottomed soup pot with broth and beans. Bring to boil, reduce to simmer until everything is soft. Salt and pepper to taste. Puree in a blender until smooth. Garnish bowl with lemon juice and fresh tarragon.

Serving Size: Makes 6 to 8 servings
