Pork Quesadillas

Ingredients

    1 pork chop (8oz bone in)
    2 tbsp OlivExtra canola/olive oil
    1/2 tsp chili powder
    1 tsp ground cumin
    1/4 cup minced onions

    2 - 8" low fat tortillas
    2 oz Brie
    1/4 oz Cotija cheese, crumbled

    1 whole Haas avocado, sliced
    4 tbsp fat free sour cream

Tips

This can be made with 1 chicken breast as well. Add your favorite salsa for a bit more zip.


Directions

Preheat oven to 400 degrees.
Brown pork chop in 2 tbsp olive oil, 5 minutes per side. Add chili powder, cumin and onions. toss to coat. Add 1/2 cup water and simmer until onions are soft.
Meanwhile arrange tortillas on a baking sheet. Add 1 oz Brie and 1/4 oz Cotija to each tortilla. When pork is done, split equally among tortillas. Fold in half.
Bake 5 minutes, turn over and bake 5 minutes more.
Serve with 1/2 avocado and 2 tbsp sour cream per serving.
