CLEAN Apple and Butternut Squash Soup

Number of Servings: 4


    2 cups butternut squash, peeled and chopped
    2 stalks celery
    2 green apples, peeled
    1/4 cup pine nuts
    1 t apple cider vinegar
    1/2 t sea salt
    1/4 cup fresh tarragon, chopped
    4-5 cups pure water


Serve in a bowl or mug slightly warm or at room temperature.


Blend all ingredients except tarragon in a high-speed blender until smooth. Add tarragon and blend for 10 seconds, just long enough for it to be mixed in.

Serving Size: Makes 4 servings of about 1 cup each.
