Split Pea Soup

Ingredients

1 cup chopped carrots
1 cup chopped onion
1 cup chopped celery
1 Tbs. olive oil
2 cans chicken broth
1 quart water
3-4 boullion cubes
2 Tbs. dried parsley
1 tsp. thyme
1 tsp. marjoram
1/2 tsp. black pepper
3 bay leaves
2 1/2 cups dried split peas
1/2 cup brown rice
Directions
saute carrots, onion and celery in olive oil under slightly tender.
Add chicken broth, water and boullion cubes.
Add parsley, thyme, marjoram, pepper and bay leaves and mix in well.
Add dried split peas and brown rice.
Bring to a slight boil on medium high, then reduce heat to low and simmer for approximately 90 minutes, until soup starts to thicken and peas are tender.
Serving size = 1 cup, 8 servings total
