CLEAN Carrot and Ginger Soup

Ingredients

    1 1/2 cups butternut squash, peeled and diced
    2 cups diced carrots
    1 1/2 cups diced summer squash
    1/4 cup chopped red onion
    1/4 cup chopped celery
    2 T olive oil
    1 T apple cider vinegar
    1 t sea salt
    Juice of a 2-inch piece of ginger, passed through a juicer
    4 cups pure water

Tips

Serve either slightly warm or at room temperature. Drizzle with a little olive oil and fresh chopped herbs.


Directions

Blend all together in a high-speed blender for about 3 minutes, or until smooth.
