Lentil Stew

Introduction

This could be a soup if you added more water... but I prefer it hearty! This could be a soup if you added more water... but I prefer it hearty!
Number of Servings: 8

Ingredients

    1 finely chopped onion
    1 tbsp sesame oil
    2 tbsp biryani curry paste
    1 large zucchini
    2 cans chopped tomatoes (garlic & roasted red pepper seasoning works well, if available)
    1 can of water
    2 cups V8 or vegetable cocktail
    2 cups rye spirals (or any whole-grain bite-sized pasta)

Directions

1) Put oil in large, heavy saucepan on medium-high heat. Add chopped onions and saute for several minutes, until soft.

2) Add all other ingredients. Bring to a boil, then reduce to a simmer for 15 minutes.

3) Serve HOT!

Makes 8 servings.
