Avocado & White Bean Wrap

Introduction

Number of Servings: 4

Ingredients

    2 tablespoons cider vinegar
    3 teaspoon yellow mustard
    1/4 teaspoon salt
    2 cups shredded red cabbage
    1 medium carrot, shredded
    1/4 cup chopped fresh cilantro
    1 15-ounce can white beans, rinsed
    1 ripe avocado
    1 ripe tomato, diced
    1/2 cup shredded sharp Cheddar cheese
    1/4 cup minced red onion
    4 8- to 10-inch whole-wheat tortillas

    To prepare, whisk vinegar, oil, mustard, and salt in a medium bowl. I like to add a dash or two of crushed red pepper for a bit of heat as well. Add cabbage, carrot and cilantro. Toss to combine.

    Mash beans and avocado in another bowl with a potato masher or a fork. Stir in cheese, tomato, and onion.

    To assemble the wraps, spread about 1/2 cup of the bean-avocado mixture onto a tortilla an top with 2/3 cup of the cabbage mixture. Repeat with remaining ingredients. Roll up and cut in half to serve.
