Introduction

My kids love it when I make mini muffins! They are perfect to bring to school, snack on after school, or even breakfast on the go! These are made with unsweetened apple sauce instead of oil or butter. My kids love it when I make mini muffins! They are perfect to bring to school, snack on after school, or even breakfast on the go! These are made with unsweetened apple sauce instead of oil or butter.
Number of Servings: 106

Ingredients

    1.5 cups whole wheat flour
    1.5 cups all purpose flour
    1 cup granulated sugar
    2 cups quick oatmeal
    4 teaspoons baking powder
    2 teaspoons baking soda
    1 teaspoon salt
    2 large eggs
    1.5 cup milk
    2/3 cup unsweetened apple sauce
    1 teaspoon vanilla extract
    2 cups mashed bananas

Directions

Combine flour, oats, sugar, baking powder, soda, and salt.
2. In a large bowl, beat the egg lightly. Stir in the milk, applesauce, and vanilla. Add the mashed banana, and combine thoroughly. Stir the flour mixture into the banana mixture until just combined. Line mini muffin pan with paper bake cups.
3. Bake at 400 degrees F (205 degrees C) for 10 minutes.
