Peanut Humus

Introduction

Ingredients

    1 15 oz. can chickpeas, drained
    1/2 C creamy peanut butter
    3 T peanut oil
    3 T chicken broth or water
    3 T lime juice
    Freshly ground black pepper
    1/4 C chopped fresh cilantro
    Smoked paprika, for garnish
    Crushed peanuts, for garnish (not included in nutritional value)

Tips

For a chunkier version, use 1 C salted peanuts instead of peanut butter.


Directions

Combine first six ingredients in food processor. Pulse until smooth. Add the cilantro and pulse several times just to mix in the cilantro. Transfer to a serving dish and garnish with paprika (and crushed peanuts if desired). Serve with flatbread or raw vegetables.
