1.5 cups flour
3/4 cup sugar
2 tsp. baking powder
1/2 tsp. salt
3/4 cup non-dairy milk
1/4 cup vegetable oil
1-2 cups blueberries (frozen or fresh)
optional: 1 tsp. vanilla extract, 1 tsp. cinnamon
watch closely while baking; cooking time varies from 16 to 20 minutes!
2. Baked for 18 to 20 minutes. Test with a toothpick. If toothpick comes out clean, they're done!
Serving Size: makes 24-32 mini muffins (depending on size)
