1.5 lb pork loin, fat removed, pounded thin 1/3 cup flour 1 egg beaten 1/4 cup milk 24 soda crackers ground into crumbs 1/4 cup oil splash of lemon juice
beat egg and milk together in bowl or deep plate. Put flour in another bowl or plate and ground crackers in a 3rd bowl. Heat oil in large pan. Dip pork into flour. Cover completely. Dip floured pork in egg/milk and coat with cracker crumbs. Fry in oil until golden brown, turn and fry other side until golden brown. Place lid on pan and reduce heat to low until ready to serve. Just before serving, raise heat to high. Drizzle lemon juice over top of meat. Put lid on again and heat until lemon juice has evaporated ( just a few seconds) Serve with additional lemon if desired.
