Lime Juice, .25 cup (remove)
*Canola Oil, 2 tbsp (remove)
vinegar, 1 tbsp (remove)
ground cumin, 1 tsp (remove)
Salt, .25 tsp (remove)
Jalapeno Peppers, 1 pepper (remove)
Chicken Breast, no skin, 20 ounces (remove)
2. Preheat grill to high heat. Oil the grill rack (if using outdoor grill). Grill the chicken until cooked through and no longer pink in the middle, 3 tp 4 minutes per side. Let cool slightly; thinly slice crosswise. Serve warm or chilled.
To make ahead: Marinate chicken in the refrigerator for up to 1 day and/or refrigerate cooked chicken for up to 1 day. Slice just before serving.
This chicken is great for leftovers, too. Try it on a whole-wheat wrap with salsa and lettuce for a quick and delicious lunch.
