Introduction

Number of Servings: 4

Ingredients

    2 semi soft avacados
    1/4 C. small diced red tomato
    1/4 C. small diced red onion
    1 jalapeno pepper (deseeded) small diced
    1/4 C. fire roasted corn off of cob(optional)
    1 TBS. fresh cilantro (chopped)
    2 limes (freshly squeezed)
    1 tsp. kosher salt

Tips

Corn is optional.
Serve with fresh baked pita chips*.

Directions

Dice red onion, and tomato (1/8"-1/4"). Deseed jalapeno pepper and dice very fine. Chop cilantro leaves only (no stems).

shave fresh corn cob and cook in small fry pan over high heat until lightly charred. put in freezer for 2-3 minutes until cool.

Add ingredients together in mixing bowl. Add avacado, lime juice and salt.

Using a potato masher or fork, mash avacado into other ingredients until desired consistancy.

Serving Size: makes 4 1/2 C. servings
