Introduction

I love making macaroni and cheese the way my grandma made it, but I don't love the extra fat and calories. Here is a lighter version of this classic. I love making macaroni and cheese the way my grandma made it, but I don't love the extra fat and calories. Here is a lighter version of this classic.
Number of Servings: 6

Ingredients

    2 cups pasta, can be the classic macaroni or any other shape you desire
    1 cup fat free milk
    1 cup shredded sharp cheddar cheese(the better the cheese, the better the taste)
    2 tbsp white flour
    2 tbsp margarine(I like earth balance spread)
    1 bay leaf
    1/2 tsp dry mustard
    1/4 tsp hot sauce
    salt and pepper to taste
    1/2 cup of bread crumbs
    Nonstick cooking spray

Tips

This is a lovely dish for special occasions like Christmas or Thanksgiving. Recipe can be easily doubled or tripled for larger dinner parties.


Directions

Boil pasta according to directions on box to al-dente. Rinse pasta in cold water and set aside.
Heat oven to 350 degrees.

In medium sauce pan melt margarine over medium heat. Whisk in flower till a smooth peanut butter consistency is achieved. Allow to cook for 1-2 minutes.

Slowly whisk in the milk and add the mustard, hot sauce and bay leaf. Stir mixture until thickened. This should take several minutes. Remove bay leaf. Add cheese and stir until melted and smooth. Add salt and pepper to taste.

Spray a casserole dish with non-stick cooking spray and add pasta. pour cheese mixture in and stir to coat pasta. level off and sprinkle bread crumbs over the top. Spray breadcrumbs with a little more cooking spray.

Place in heated oven and bake for 25-30 minutes or until breadcrumbs are browned and cheese is bubbly.
Allow to cool for a few minutes and serve.


Serving Size: makes 6 - 1/2 cup servings
