Hamburger Harvest Soup



Introduction

This is a hearty soup perfect for those cold winter days. This is a hearty soup perfect for those cold winter days.
Number of Servings: 6

Ingredients

    3/4 lb lean ground beef
    1 cup celery, chopped coarsely
    1 cup carrots, sliced
    1.5 cup mushrooms, sliced
    1 small onion, chopped
    2 cloves garlic, minced
    1/2 cup brown rice
    3/4 cup canned corn
    6 cups water
    1 cup tomato sauce
    3 beef bouillon cubes
    1tsp dried basil

Directions

Brown ground beef in large, heavy pot. Drain off any fat. Add water, bouillon, rice, celery, carrots, mushrooms, onion, and garlic. Bring to a boil, then simmer over low flame 30 minutes. Add tomato sauce, corn, and basil. Cook 5 more minutes. Serve hot.

Makes 6 servings

    I made this last night and it was wonderful! I made a little bit more of it because I had a pound of ground beef...My husband kept commenting on how delicious it was and how he wanted me to make sure I wrote the recipe down :) Great ground beef/veggie soup for cold days! - 2/1/08

  • I've made one close to this recipe and it's one of my favorite comfort foods. My grandmother made it, but with potatoes. BUt I make a big pot, and put over half of it in the freezer. - 2/9/08
