Ingredients

    2 (2-inch) wedges of kabucha squash, seeds removed
    1 cup cauliflower florets
    2 baby bok choys, cut into 4 length-wise
    (I substituted 1/2 cup each bok choy, kale, spinach, and romaine)
    2 cups cooked brown rice
    2 cups cooked adzuki beans
    1 cup soaked hijiki seaweed
    OPTIONAL: Fresh cilantro leaves to garnish

    Dressing
    1-inch piece of ginger
    1/4 cup white sweet miso
    1/4 cup olive oil
    1 clove garlic
    1 t agave
    Juice of 1 lemon

Directions

Cook beans and rice thoroughly. Steam veggies for 3 minutes, until tender. In a bowl, layer steamed greens, beans, cauliflower, rice, and soaked seaweed. Pour 1-2 T of dressing over the top.

Serving Size: Makes 4 servings of about 2 cups each
