Introduction

Start with onion in pot sprayed just with pam or oil oil spray and work down adding everything in. simmer until all is soft.
Can choose to puree but I did not this time.

Ingredients

    Pam or olive oil spray
    Onion
    yellow squash
    eggplant
    tomato, fresh and canned both
    green pepper
    corn off the cob
    pepper
    salt
    sugar to break acidity taste
    couscous or other grain, cooked

Tips

Can puree if want, and change veggies per season
Did not add beans but could for heartier version.


Directions

Start by browning onion then work down list bringing all to soft texture. Couscous is already cooked when add it.
