Melissa's Braised Chicken

Ingredients

    4 Chicken Thighs
    4 Chicken Drumstick,
    1 tsp Chili powder
    1 tsp Cumin seed
    1 Small Onions
    2 Large Cloves of Garlic
    2 Tbsp Yellow Mustard
    1 Tsp Worchestire Sauce
    1 Tsp Hot Sauce
    1/2 Cup Ketchup
    1 Tsp Balsamic Vinegar
    2 Tbsp Apple Cider Vinegar
    2 Tbsp Honey
    2 Cups Chicken Broth
    1 Tbsp Extra Virgin Olive Oil
    1/2 Cup White Wine
    Salt
    Pepper

Directions

1. Heat oil over med-high heat. Season Chicken thighs and legs with salt, pepper, cumin and chili powder.

2. Once oil is hot, add chicken to pan. Sear on each side until golden brown. (About 3 minutes on each side)

3. Add onions and garlic to pan. Deglaze the pan with the white wine. Let simmer for about 1-2 minutes.

4. Meanwhile, in a separate bowl make the "BBQ sauce" by mixing the ketchup, mustard, worchestire sauce, hot sauce, balsamic vinegar, apple cider vinegar and honey. Stir until it forms a smooth texture.

5. Once wine has reduced add half the bbq sauce mixture (leaving the remainder for the end) and the chicken broth to the chicken. Bring up to a boil and reduce to medium, pop a lid on it and let it cook for about 20 - 25 minutes until the chicken is cooked through.

6. Once the chicken is no longer pink, remove from the stove top, top with the remaining bbq and broil it for about 5 minutes until the skin becomes crisp and the bbq sauce has caramalized.

7. Serve chicken with the pan sauce along side. Enjoy!
