Lentil Tomato Soup

Introduction

Thick soup with veggies... Thick soup with veggies...
Number of Servings: 6

Ingredients

    Lentils, 8 oz
    Diced Tomatoes, 1 Can and Juices
    Onions, raw, 1 large Diced
    Carrots, raw, 2 large 1/2" Slices
    Olive Oil, 1 tbsp
    Thyme, ground, 2 tsp
    Bay Leaf, 1 tsp, crumbled
    Salt, 1 tsp
    Pepper, black, 0.5 tsp
    Water, tap, 4 Cups
    *BacOs Bacon Bits, 4 tbsp
    Celery 1 Large Stalk 1/2" Slices

Tips

Good veggie dish low in Carbs - about 12...


Directions

3 quart pot add Olive Oil, simmer Celery and Onions about 3 minutes add other ingredients and simmer for 15 to 20 minutes. Add Diced Tomatoes with juice and simmer another 15 minutes. For less Tomato taste add only 1/2 of can.
