Cinnamon Swirl Protein Bread

Ingredients

    1/3 cup turbinado (sugar in the raw)
    2 tsp cinnamon

    1 1/2 cups oats
    1/4 cup turbinado
    1 Tbsp baking powder
    1/2 tsp salt
    1 1/2 tsp cinnamon

    2 egg whites
    1 cup 1% milk
    1/3 cup mashed banana
    1/4 cup plain yogurt

Tips

Makes 10 servings. Bread will be dense.


Directions

Preheat oven to 350 degrees.
You can use a loaf pan (thicker, denser bars) or an 8x8 baking dish for these bars. If not using non-stick pans, grease well.

In food processor: combine 1/3 cup turbinado sugar with 2 tsp cinnamon. Whirl until sugar is broken down into smaller granuals. Place in small bowl and set aside.

In food processor: combine 1 1/2 cups oats and 1/4 cup turbinado sugar. Whirl until its a flour-like consistency.
Place in large bowl and add 1 1/2 tsp cinnamon, baking powder, and salt. Blend.

In medium bowl, whisk together egg whites, milk, banana and yogurt.

Add the wet to the dry and mix, but don't over-stir.

Place about half the batter in the bottom of pan. Sprinkle half the cinnamon/sugar mixture over the batter to coat. Repeat the layers. Draw a knife through the batter to marble.

For bread pan: bake 45 to 55 minutes
For 8x8 dish: bake 25-35 minutes

Let cool for 10 min, then enjoy!

Serving Size: Makes 10 bars.
