1-1/3 lb. 93% lean ground beef
1/2 onion, diced
26.5 oz spaghetti sauce
12 oz lasagna noodles (not cooked)
1-1/2 C water
1 T oregano
12 oz cottage cheese, 1% milk fat
15 oz ricotta cheese, park skim
2 C shredded mozarella cheese
1/4 C parmesian cheese (shaker style)
Brown ground beef wtih onion and drain. Add the spaghetti sauce and 1-1/2 C water and simmer 10-15 minutes on low.
Next mix ricotta, cottage cheese, eggs, oregano, half of mozarella cheese, and parmesian cheese and mix together, put aside.
Spray a 9 x 12 baking pan with cooking spray. Add 1 cup of sauce on bottom of pan then line 3-4 noodles on top. Add 1 more cup of sauce. Then spread 1/3 of cheese mixture on top, followed by more noodles, sauce cheese mixture, to 3 layers, ending with cheese mixture. Cover with foil on top and bake for 45 minutes. Take foil off and add other half of mozarella cheese and bake 10-15 more minutes. Let stand 10 minutes. Makes 8 good-sized servings.
