A Veggie Adventure

Introduction

Today I hung out with Milo. He's a vegan and we love cooking together in the kitchen. We happened to have eggplant from the neighbor's garden and a banana pepper from mine, so we got creative! Milo had his without cheese because he's vegan. I added cheese to mine because I'm not, and we both had it over a Quinoa and flax porridge. DELICIOUS Today I hung out with Milo. Ingredients

    Onions, raw, 1 cup, chopped
    Banana Peppers, 1 small (4" long)
    Eggplant, fresh, 2 cup, cubes
    Canned Tomatoes, 1 cup
    Salt, 1 dash
    Pepper, black, 2 dash
    Basil, .5 tbsp
    Parsley, dried, 1 tbsp
    Garlic, 1 clove

Tips


Not Calculated:
Add Mozerella and Parmesan if desired. Obviously it is not vegen then, but it's still vegetarian. I'm neither, but it was deliciosu.

We spooned it over 1/2 cup Quinoa and 4 tablespoons flax seed boiled in 1.5 cups water made enough porridge for 2 people. Tomorrow I plan to have it over polenta for breakfast with a chicken apple sausage.


Directions

chop onions and eggplant into 1/2 inch cubes, spread in pan. Mince 1 small Banana Pepper and 1 clove garlic, sprinkle salt, pepper, basil, parsley over them, and stir it all together with the canned, diced tomatoes.
