Wheat Berry Salad

Introduction

Ingredients

    8 cups water
    2 cup dry wheat berries (whole-grain wheat)
    1/3 cup walnuts, toasted and chopped
    1 lg. Gala or McIntosh apple
    1 lg. Granny Smith apple
    1 celery rib, sliced thin
    1/2 cup fresh mint leaves, washed well, spun dry, and chopped
    1/2 cup fresh cilantro, washed well, spun dry, and chopped
    1/2 cup dried sour cherries, slightly chopped
    1/4 cup raisins
    2 green onions, chopped
    1/4 cup pomegranate infuse red wine vinegar
    1/2 cup fresh orange juice

Tips

I used fresh chocolate mint that we planted last year along with cilantro. This combination added great taste to this salad.


Directions

In a saucepan bring water to a boil and add wheat berries. Simmer wheat berries, covered, 1 1/2 hours, or until tender. Drain wheat berries in a colander and cool to room temperature.

Cut apples into chunks and in a large bowl toss with wheat berries and all remaining ingredients.

Makes about, 12 one-cup servings.
