Oat Bran Cottage Cheese Pancakes

Introduction

A light, fluffy, and extremely healthy pancake. I will usually have 2-3 and refrigerate leftovers for the next day. Great source of fiber and protein for minimal calories. Ingredients

    1/2 cup Oat Bran
    1/4 cup Fage all-natural nonfat Greek yogurt
    1/2 cup Simply Kraft Fat-Free Cottage Cheese (or any other fat-free cottage cheese)
    1 tsp ground Cinnamon (optional)
    1/2-cup Egg Substitute (such as Great Value Original Liquid Eggs)
    1 tsp Truvia sweetener (optional - offsets slight bitterness of cinnamon)
    Salt and Pepper to taste (optional)

Tips

You may have to get actual oat bran from a health-food store or can order bulk Bergin Oat Bran at Amazon. (don't know if it's necessary, but I store extra in freezer)

Directions

Combine all ingredients (I actually use a large coffee mug!).

Allow to sit for 5 minutes while oat bran absorbs some of the liquid.

Cook on griddle or frypan. Can use a spray or even a tsp butter for frying - but be sure to allow for it in your nutrition entries.

Serving Size: makes 6 pancakes.
