Pumpkin Cranberry Muffins

Ingredients

    2 cups whole wheat flour
    3/4 cup sugar
    1 tsp baking soda
    1/8 tsp salt
    1 tsp cinnamon
    1/2 tsp ginger
    1/4 tsp nutmeg
    1 cup canned pumpkin, no salt added
    1/4 cup egg substitute
    1/4 cup canola oil
    1 cup skim milk
    1 cup fresh cranberries, chopped

Tips

If fresh cranberries are unavailable, dried can be substituted or raisins as well.

Directions

Preheat oven to 350 degrees F. Coat a muffin pan wiht nonstick cooking spray. Ina large bowl, combine flour, sugar, baking soda, salt, cinnamon, ginger and nutmeg. Combine pumpkin, egg, oil and milk in a medium bowl.
