Egg whites and veggies breakfast casserole

Introduction

veggies, egg whites, and 2% cheese are combined and baked for a delicious breakfast packed with veggies veggies, egg whites, and 2% cheese are combined and baked for a delicious breakfast packed with veggies
Number of Servings: 1

Ingredients

    2 C Egg whites
    4 sweet peppers (pick the colors!)
    2 C onions
    6C Chopped Broccoli
    1 Can Sliced mushrooms (fresh if you have them)
    1 1/2 C 2% shredded cheddar cheese
    1/4 C chopped black olives

Directions

Chop all veggies (except black olives) and saute until crisp tender in a frying pan.

Spray a lg casserole dish with non-stick cooking spray.
Put veggies in the casserole dish.
Sprinkle cheese across the top.
Pour egg whites over veggies/cheese.
Back at 350 for approx. 40 minutes
