Birthday Cake Strawberry Cream Cheese

Ingredients

    (Cake)
    1 Cup Strawberries
    1/2 Cup Organic 100% Stone Ground Whole Wheat Flour
    1 Scoop Body Fortress Whey Protein Strawberry
    1 Cup 1 Minute Quick Oats (100% Rolled Oats)
    1/4 Cup Whole Ground Flax Seed Meal
    1 Cup Fat Free Cream Cheese
    1/3 Cup Sugarleaf Wisdom Natural Sweetleaf Stevia
    2 Eggs
    1 Tsp Baking Powder
    1 Tsp Baking Soda
    1/2 Cup Fat Free Chobani Greek Yogurt Plain
    1/2 Cup Applesauce Unsweetened

    (Cake Middle)
    1 1/2 Cups Fat Free Cream Cheese
    2 Eggs
    3/4 Tbsp Vanilla Extract
    3/4 Tbsp Lemon juice
    1/3 Cup Sugarleaf Wisdom Natural Sweetleaf Stevia
    2 Tbsp Light Sour Cream
    1/2 Cup Almonds Ground

    (Cake Topping/Garnish)
    2 Cups Strawberries Cut In Halves
    15 Oz. Package Sugar Free Strawberry Glaze

    (Cake Frosting/Topping)
    1/4 Cup Lactaid Fat Free Milk
    1/4 Cup 100% Stone Ground Whole Wheat Flour
    1/2 Cup Smart Balance Light Butter
    1/2 Cup Sugarleaf Wisdom Natural Sweetleaf Stevia
    1 Tsp Vanilla Extract
    1/2 Cup Fat Free Cream Cheese
    1/2 Cup Almonds Ground

Directions

Preheat oven to 350 F. Start with the cake and put the strawberries in the food processor. Once that is done add all cake ingredients to a large mixing bowl and mix with a hand mixer until they are all completely combined and make a batter. Then spray two 9" square pans with cooking spray and pour the batter into them. Cook them for 25 minutes then add the next step. For the cake middle add all ingredients to a mixing bowl and mix until it's completely mixed together (almonds should be ground in a food processor first if not already ground). Then when the 25 minutes are up for the cakes pour this mixture on top of the one of them that is the bottom layer. Put the cakes back in the oven for another 15 minutes. While they are cooking you can start on the cake topping and frosting. For the cake topping just mix together the strawberries that have been cut in half and the glaze and place them in the refrigerator until they are needed. Then move on to the icing. (almonds should be ground in a food processor first if not already ground) For the icing just add all ingredients to a mixing bowl and mix them together until they form an icing (you might need to put this icing in the freezer for an hour or two for it to harden a little). When cakes come out of oven let them cool for at least an hour. Then add half the strawberry topping to the top of the bottom cake layer and then place the top cake layer on top. Then pour the icing over the whole cake and pour the other half of the strawberry topping over the icing.
