Fauxtatoes Atkins Style

Ingredients

    1 large head cauliflower
    2 tbsp butter
    4 oz cream cheese
    2 tbsp sour cream
    salt and pepper to taste

Directions

Trim the leaves from the cauliflower and carefully remove the stem keeping the head intact. In a microwave safe dish, add the cauliflower, stem side down, with a few tablesoons of water. Cover with plastic wrap and steam in microwave for 7-8 minutes. Add cauliflower and remaining ingredients to food processor and blend for desired consistency.

    I make all the time and eliminate the cream cheese but use shredded cheddar instead. I sprinkle with bacon bits and bake in the oven. - 5/29/11
