Gluten Free Pizza Dough

Introduction

This is a modified version of a popular Brazillian cheese bread recipe, but it works great for pizza dough! Ingredients

    1 cup milk
    4 tbsp butter
    1/4 cup oil (olive oil for paleo)
    1 tsp salt
    2 1/4 cups tapioca flour
    2 eggs
    1 1/2 cups cheese
    1/4 cups parmesan cheese, grated
    1/4 cup rice flour or other gluten free flour

Tips

This dough can be really sticky so don't use tin foil to line your pan or you'll have tin foil pieces in your pizza. I prefer to use parchment paper or oil the pan I'm using REALLY WELL.


Directions

Boil milk, butter, oil and salt; add to flour and mix well. Add eggs 1 at a time, let dough cool. After dough has cooled add cheese. Oil pan heavily so dough doesn't stick, pour into desired shape. Bake at 350 for 18 minutes, flip dough and cook for 8 minutes. Add toppings and cook another 7-10 minutes

Serving Size: makes 2 medium sized pizza crusts
