Gluten Free Beef & Broccoli Over Quinoa

Ingredients

    4 Cups Broccoli (Chopped)
    2 Cups Sweet Onions (Chopped)
    2 Tbsp Canola Oil (Or Sesame Oil)

    12 Oz. Beef Fajita Meat
    Enough Water To Cover Beef In Crock Pot

    1/2 Cup Dry Quinoa
    1 Cup Water

    (For Marinade)
    4 Tbsp Water
    1/4 Cup Tamari Gluten Free Soy Sauce Reduced Sodium
    1 Tbsp + 1 Tsp Minced Garlic
    4 Dashes Black Pepper

    (For Sauce)
    1 Cup Water
    1/4 Cup Tamari Gluten Free Soy Sauce Reduced Sodium
    1/4 Cup Brown Sugar
    2 Tsp Ground Ginger
    1 Tsp Canola Oil (Or Sesame Oil)
    1/4 Cup Cornstarch

Directions

Put the beef in the crock pot and cover with water. Cook it on high for 4 hours. Cook the quinoa in desired method. In 4 hours Take the beef out and strain the the water out. Then mix together the marinade ingredients in a small bowl. Then put them in a ziploc bag and add the beef making sure it's all covered with the marinade. Stick it in the refrigerator for 30 minutes. Then make the sauce by whisking together all of the ingredients. Then add the 2 tbsp of oil to a pan or wok and place it on the stove. Add the broccoli and onions and stir over medium high heat for about 5 minutes. Then add the beef and the sauce and stir them in for about 5 more minutes. Then divide the quinoa evenly on 4 plates and then divide the beef and broccoli evenly over top of it.
