Peanut Butter-Peach Chicken with Pea-Rice




Number of Servings: 3

Ingredients

    3 Chicken Breasts
    1/2 Onion, chopped
    Butter
    2 tbsp Peanut Butter
    Peaches canned, 4 halves
    Cheese, 2-3 slices
    50 ml cream
    50 ml syrup from the peaches
    1tbsp vinegar
    salt and pepper
    2 cups Parboiled Rice
    100g dried peas
    vegetable broth

Tips

very high in proteins, but if you want to lighten it up a bit, leave the peanut butter and substitute the butter, if you find any, you can also use unsweetened peaches and low fat cheese... we didn't have any of that at home.


Directions

precook the peas for about 1 hour, you could also use canned peas.
chop the onions, slice the peaches, and fry the chicken in a little butter. It doesn't have to be done, only a little browned. put the chicken into a casserole, season with salt and pepper, spread about 1 tbsp Peanut Butter onto them, put the peaches and cheese on top. Add half of the onions and the fourth chopped peach. Put into the oven for about 10 min.
Meanwhile, bring water to a boil, add rice, cooked peas, onions and vegetable broth and simmer for about 20 minutes.
Prepare the sauce with the cream, vinegar and syrup, season with salt and pepper and add the other tbsp peanut butter. After the ten minutes, add the sauce to the chicken and bake for another 10 minutes.
