Decadent Rhubarb Cake

Introduction

When you really want something rich, this will do the trick. It was inspired by a scone recipe. When you really want something rich, this will do the trick. It was inspired by a scone recipe.
Number of Servings: 16

Ingredients

    2.5 c flour
    .5 c + 3 T sugar
    1 T baking powder
    .5 t salt
    6 T cold butter, cut into chunks
    2 c diced rhubarb
    1 large egg
    1 large egg yolk
    1 c cream (I used raw cream)

Directions

Preheat oven to 400 degrees. Place parchment paper on large baking sheet.

Combine diced rhubarb and 3 T sugar in small bowl.

In a food processor, combine dry ingredients. Add diced butter and pulse until coarse crumbs form. (Not too long). Move this mixture to a large bowl.

Add rhubarb & sugar mix to the large bowl with dry ingredients and butter combination.

Combine egg, yolk and cream in food processor and pulse to combine.

Add to to the large bowl, gently combining all ingredients. Spread batter on parchment paper, trying to get a uniform depth of about .5 inch.

Bake for approximately 20-25 minutes. Test beforehand at 18 minutes if you smell browning cake.
