Introduction

Got this recipe from a South Beach Diet (Phase 1) site. Yummy, & just enough sweet to satisfy! I make them in my silicone muffin cups - portion control. I use Stevia rather than Splenda - healthier. Number of Servings: 12

Ingredients

    2 eight oz packages of low fat cream cheese, softened
    2/3 cup powdered Stevia
    1/4 tsp almond extract
    9 Tbsp egg whites

    TOPPING
    1 cup low fat sour cream
    2 Tbsp Stevia
    1 tsp vanilla extract

Tips

Adjust the microwave time based on the oven wattage and the amount you put in each cup.

Directions

Beat cream chees, Stevia and almond extract until fluffy. Add the egg whites, 3 Tbsp (1 "egg") at a time, blending well. Beat at low speed until blended.

Pour into 12 silicon muffin cups. Arrange them either on a microwavable plate or, if you have a turntable in your microwave, take it out, arrange on that, & return.

Nuke for 12 minutes on power "6" (medium high) - if you don't have a turntable, then turn every 5 minutes. The cheese mixture will be a bit soft in the center, but will set up in the fridge.

Mix topping ingredients together & spread evenly on the top of each cup.

Refrigerate for several hours.

Serving Size: Makes 12 "muffin" cups
