3 Tbsp Light cream cheese
2 egg whites, whipped
1 Tbsp flax seed meal (ground flax)
1 tsp vanilla extract
1 tsp ground cinnamon
Top with blueberries, raspberries or fresh sliced strawberries and light whipped cream (only 5 calories per serving) or Coolwhip Free (15 calories per serving).
1/2 cup strawberries adds 25 calories
1/2 cup raspberries adds 32 calories
1/2 cup blueberries adds 42 calories
Heat pan or grittle to medium heat. Lightly spray pan with butter flavored cooking spray. Spoon batter into pan and cook until golden brown, use spatula to flip pancake and cook secon side until golden brown. Plate your pancake and top with desired fruit and topping, or enjoy with sugar free pancake syrup.
Serving Size: Whole recipe is one large pancake.
