Carla's South Beach Friendly Omelet-Phase 1

Introduction

This is a great start for the day for those not worried about egg consumption. This is a great start for the day for those not worried about egg consumption.
Number of Servings: 1

Ingredients

    Two eggs
    Two egg whites
    Private Selection White Cheddar Cheese (2 slices)
    Five cherry tomatoes
    Salsa

Directions

Preheat pan at medium
Spray cooking oil in pan
Beat two eggs and two egg whites
Slice cherry tomatoes
Break cheese slices in two
Pour eggs into medium heated pan
Put cheese slices in middle of partially cooked omelet
Spread cheery tomatoes on omelet
Spread 2 to 4 tablespoons of salsa on omelet
When almost cooked through, fold omelet
When cooked, place on plate.
Spread 1 or 2 more tablespoons of salsa on omelet
