Lemon Basil Chicen Thighs

Ingredients

    4 boneless, skinless chicken thighs
    2 tbsp dijon mustard
    1/4 cup low fat plain yogurt
    grated lemon rind from 1/2 lemon
    1 lemon, juiced
    4 tbsp chopped fresh basil
    dash black pepper
    1 tsp salt

Directions

Preheat oven to 375. Combine mustard & yogurt. Salt and place thighs in oven proof dish (1 1/2 inches deep). Pour yogurt mixture over chicken. Sprinkle with lemon rind, juice & basil. Add pepper. Bake for 25 minutes.
