This is good to take to work; nook it in the microwave and enjoy.
Add to that:
5 spears of asparagus diced small,
2 TBS dices green bell pepper,
1 TBS diced onion
4 slices fresh mushrooms diced small,
Saute this for about 3 minutes then add-
1 slice ham diced small,
1/3 cup of frozen spinach (can us a couple handfuls of fresh if desired)
saute till heated through and spinach is cooked (about 3-5 minutes)
beat 2 eggs in a bowl then pour over veggies. cook through then flip (or scramble it)
shred 3/4 ounce of cheddar cheese, cover top of fritata, place in oven on broil, cook till cheese melts. remove from pan, (put on plate) and add 2 TBS of Picante sauce (I like the hot, but chose your preference)
This is a very filling breakfast; so delicious and good for you, too!
