    250g Self Raising Flour (UK)
    1 tsp bicarbonate (baking) soda
    1/2 tsp salt
    100g skimmed milk
    150g fresh or frozen raspberries
    100g Fat free raspberry yogurt
    100g Brown Sugar
    1 Large Egg
    3 tbsp vegetable oil


Preheat oven to 350 degrees (Gas Mark 4).

In a large bowl, soft flour salt and soda. Stir in the sugar. Set aside.

In a jug beat together yogurt, egg, milk and oil. Pour the contents of jug into the bowl and stir gently until combined (do not over mix because this will affect rising ability of muffins).

Fold in raspberries and spoon the mixture into 12 muffin cases. Place cases into a muffin tray and cook for approx 15 minutes (until muffins have risen and are golden).

When muffins are ready they will be bouncy and firm to touch (not soggy).
