Leftovers Quiche

Introduction

This is a mash-up of ingredients that I needed to use up in my fridge.
Low-carb recipe, suitable for Induction phase of Atkins.

Number of Servings: 6

Ingredients

    6 oz. leftover taco meat (ground beef and 1/2 T. taco seasoning)
    5 oz canned chicken
    2 c. cheddar cheese, shredded
    1/2 c. diced tomato
    6 small black olives, chopped
    2 oz. diced green chiles
    1/2 c. heavy cream
    5 large eggs, beaten

Tips

Of course, these were my leftovers. Not everybody has the same things in their fridges. Quiches are a great way to use up odds and ends.


Directions

Preheat oven to 350 degrees (F). Lightly grease a 9-10" pie plate.
Place taco meat and chicken in bottom of dish, then top with cheese.
Sprinkle tomato, olives, and chiles evenly across cheese.
Mix heavy cream into beaten eggs, then pour evenly over ingredients in dish.
Bake until center is set when tested, 30-40 minutes.

Serving Size: Makes 6 servings
