Oatmeal Cream Pies

Ingredients

    1/2 cup unsweetened applesauce
    1/2 cup unsalted butter, room temperature
    1/2 cup brown sugar substitute
    1/4 cup brown sugar
    1/4 cup granulated sugar
    1/4 cup granulated sugar substitute
    2 eggs
    1 tsp vanilla
    1 tbsp honey
    1 cup all-purpose flour
    3/4 cup white whole wheat flour
    1 tsp baking soda
    1/8 tsp cinnamon
    1/2 tsp salt
    1 1/2 cup quick cooking oats

    2 egg whites
    1/4 cup granulated sugar substitute
    1/4 cup granulated sugar
    1/4 tsp cream of tartar
    1/2 tsp vanilla

Directions

1. Preheat oven to 350 degrees. Line baking sheets with parchment paper.
2. Cream butter and sugars. Add eggs, honey, and vanilla. Beat.
3. Whisk together flour, baking soda, cinnamon, and salt. Slowly add to wet mixture. Stir in oats. Chill 15 minutes.
4. Drop tablespoon amounts onto prepared baking sheet. Bake 10-12 minutes until edges start to brown.
5. In double boiler, add egg whties, sugars, and cream of tartar. Whisk frequently until froth and sugar is dissolved. Pour into heat safe bowl and whisk with mixer until peaks form. Carefully/Gently fold in vanilla.
6. Make sandwiches!
