Introduction

Number of Servings: 1

Ingredients

    1 can diced tomatoes with chilis, mild
    2 sweet potatoes, cooked & cubed
    1 can black beans
    2-3 C.pulled pork, smoked and slow cooked
    1 onion, chopped
    3 garlic cloves, minced
    2 T. olive oil

Directions

Heat olive oil in skillet, add chopped onion and minced garlic, saute. Add cubed sweet potatoes, the can of black beans, heat through, add meat and heat through.
YUM!

Serving Size: makes 6-8 cups
