1 Cup dry Wheat Berries
1/4 cup canola oil
3 cup fresh Spinach, chopped
1/2 medium onion
1 clove garlic
4 cups low sodium chicken broth
1/2 cup fresh mushrooms, pieces or slices
1/2 cup frozen sweet corn
1 can dark red Kidney Beans, no salt
1 can garbanzo beans, reduced sodium
1 can diced Tomatoes
2 tsp. fresh Thyme, chopped
1 Tbsp. fresh Oregano, chopped
Chop onion, garlic, and spinach. Pour oil into a separate saucepan, brown the onion, garlic, and wilt the spinach. Add broth, diced tomatoes, frozen sweet corn, and beans. Drain wheat berries, add to soup along with herbs and let simmer about 45 minutes.
Serving Size: 6 (1 1/2 cup+ servings)
