Introduction

Low Carb stir-fry using leftover pork tenderloin. Low Carb stir-fry using leftover pork tenderloin.
Number of Servings: 4

Ingredients

    2 T. butter
    1 T. olive oil
    1 large onion, chopped
    2 c. green bell pepper, chopped
    1/2 c. yellow squash, chopped
    4 t. garlic, minced
    2 T. sesame oil
    1 pork tenderloin, cooked, about 1 lb.

Tips

Net carbs are 5.5. To lower carbs even more, you can use smaller servings.

Directions

Heat butter and olive oil over medium-high heat in a large pan. Add everything except the sesame oil; stir fry until vegetables are tender and everything is nicely browned. Remove from heat and toss with sesame oil.
