I put a bit of red taco sauce on the plate & dip the eggs in it.I did try using 2 large eggs, too much for me & here in my town it's really hard to find medium sized eggs. I put a bit of red taco sauce on the plate & dip the eggs in it.

Ingredients

1/2 tsp coconut oil
1/4 cup turkey sausage crumbles (Jimmy Dean)
1 extra large egg
1 tsp cold water
salt & pepper to taste
Tips
The Jimmy Dean Hearty Turkey Sausage Crumbles is usually already thawed at the store but I take it home & throw it in the freezer. If you keep your crumbles in the fridge, you won't have to pre-warm the crumbles.
Directions
Add coconut oil to non stick fry pan & heat up pan. Add sausage crumbles & cover/cook over medium heat for about 1-2 minutes. Uncover & remove from heat. Scramble egg & add cold water (I really eyeball the water). Pour in pan & replace over medium low heat. As egg on bottom begins to cook, pull cooked egg portions to center of pan, letting uncooked egg roll to outside. I do this just once & then cover with the lid for about 1-2 minutes & then flip the eggs, recover/cook for another 1-2 minutes. If you want to add cheese, add it to the top of the eggs after flipping (this will add 80 calories & 6 grams of fat for 2% Kraft shredded cheddar).
