Homemade 50/50 Pancake/Waffle Batter

Introduction

I found this recipe in a book from www.msgmyth.com. It makes fantastic pancakes. Personalize it by adding cinnamon, vanilla, or your favorite seasonal fruit (I love berries, peaches, or bananas). Number of Servings: 3

Ingredients

    2 cups milk (I used 2%)
    2 tbsp vinegar
    2 tbsp oil
    1 egg
    1 tsp sugar (I used Organic Cane Sugar)
    1/2 tsp salt
    1 tsp baking soda
    2 tsp baking powder
    2 cups flour (I used Hodgson Mill 50/50 Wheat & White Flour)

Directions

Combine milk and vinegar. Let it sit for 3 minutes. Add remaining ingredients EXCEPT for baking powder. Mix well. Add baking powder and mix. Let it sit for 1 minute. Ladle onto griddle or waffle iron.

Makes 3 servings of 4 pancakes.

The batter will seem watery and thin, and the pancakes will turn out thin. But they are light, filling, and delicious! I enjoy them with All Natural Chicken & Apple Sausage.
